We had another rainy, snowy, slushy weekend. I didn’t leave the apartment yesterday. The good thing about this weather is that I’ve been doing some cleaning and organizing. The bad thing is that I seem to be eating a lot of carbs! Yesterday I made banana nut muffins. I’ve been trying to not use as much white flour so I had bought almond flour and some gluten free flour from Trader Joe’s. I decided to do 1/3 almond to 2/3 gluten free flour. I also used almond milk instead of regular milk and olive oil for the cooking oil.
They actually came out pretty good for my first time making banana muffins. I did use regular sugar but next time I may try applesauce or agave sugar.
