Once Memorial Day is over it’s always a reminder that summer is only a few weeks away and that I need to lose the winter fat. So, on Friday, June 1st I decided this would be a month of healthy eating. I thought I would try removing bread (and most whites) and processed foods from my diet (at least for the month). I tend to do well the first couple of days and then I run out of meals I’ve prepared and fall back on just buying stuff at work. This time I thought I’d try cooking a weeks worth of food on the weekend. Since Saturday was a rainy day it worked out well. I went shopping in the morning and then started washing fruits and vegetables.
By Saturday afternoon I wasn’t even half way done with washing, chopping and cooking the meals! Sunday I continued cooking some more food and washing more dishes. I think I washed 3 piles of dishes and still have more in the sink!
I really liked this chicken salad. It has apples, grapes, and walnuts in it. The recipe called for raisins but I like grapes much better. I used mayonnaise but next time I’m going to either make my own mayo or make a light dressing to put on it.
